Restaurant Turnaround

30-Day Restaurant Turnaround & Operations Fix

When a restaurant is losing money, losing staff or losing consistency, Israel Johnson can come in and help turn around the operation in approximately 30 days—diagnosing the problems, stabilizing the leaks, building and training the systems, and leaving Playbook behind to keep them running.

Turn Around My Restaurant

Four phases in 30 days

Every turnaround follows a defined process so ownership knows what happens and when.

  • Days 1–3 · Diagnose: on-site baseline of labor, COGS, purchasing, scheduling, management, reviews, service and SOP gaps
  • Days 4–10 · Stabilize: stop immediate leaks and establish accountability
  • Days 11–20 · Build & Train: SOPs, recipes, manager routines, scorecards, labor and cost controls
  • Days 21–30 · Measure & Transfer: measure results, correct misses, hand over systems in Playbook

Signs your restaurant needs a turnaround

Rising food or labor cost, inconsistent service, slipping reviews, high turnover, managers putting out fires instead of running shifts, or an owner who can't step away. A restaurant fixer's job is to find the root causes and build the routines that correct them.

Fee and performance commitment

30-Day Turnaround engagements typically range from $5,000–$6,000. Before starting, we agree on the baseline, objectives and measurable targets. If agreed deliverables and commitments are not met, the client may qualify for a refund or service credit of up to 50% of the fee, subject to written terms. No specific profitability outcome is guaranteed. A longer 90-Day Turnaround program is also available.

Frequently asked questions

Can a restaurant really be turned around in 30 days?

Thirty days is enough to diagnose, stop the biggest leaks, install core systems and train the team where appropriate. Some operations benefit from a longer 3-, 6- or 12-month engagement to fully embed the changes.

Is Israel on-site?

Yes. The diagnosis and the build-and-train work are hands-on with owners, managers and staff.

What happens after day 30?

Standards, training and accountability continue in Playbook. Ongoing engagements are available if you want continued leadership.

What does a turnaround cost?

Typically $5,000–$6,000, depending on size, complexity, number of departments or locations, and scope.
